Order up: Eclectic funk sextet Lettuce has announced its ninth studio album, Cook, due out via the band’s Lettuce Records imprint on December 3rd. In addition to detailing the album and sharing its first single, “Gold Tooth”, the band has announced a number of additions to its upcoming concert schedule, dubbed the Lettuce Cook World Tour [get tickets].

While Lettuce—Adam Deitch (drums, percussion), Adam “Shmeeans” Smirnoff (guitar), Erick “Jesus” Coomes (bass), Ryan “Zoid” Zoidis (alto, baritone, and tenor sax; synths), Eric “Benny” Bloom (trumpet, horns), and Nigel Hall (vocals, Hammond B-3, Rhodes, clavinet, keyboards)—released a live album recorded with the Colorado Symphony in early 2025, Cook will mark the band’s first new studio LP since 2022’s Unify.

“This record is a little more three-dimensional than our past albums,” Adam Deitch said of Cook. “It shows a lot more sides to the band, exploring further depths of production and arrangements.”

\The first single from the 16-track project, “Gold Tooth”, is a funk-rock stunner with an infectious, clap-along beat and more than a little grit. “This is what happens when me and Shmeeans get together and make sumn FUNKY,” said Deitch. “This song is giving strong 1990s Prince & Chaka Khan vibes,” agreed Bloom. Added Hall, “This is something that we’ve sat on for a minute, and I’m glad to put some ears on it finally.”

The band also recently announced the launch of Lettuce Crush wine brands in collaboration with Aquila Cellars, along with a recipe book featuring pairings to be included with the vinyl album and available in digital form. The wine was brought to life by Bloom and Zoidis’ wine distribution company, Benny & Zoid Selections, who made it accessible to purchase nationwide online. “Music and food are very related,” said Deitch. “Use the wrong ingredients in either and you can ruin the sound and the meal.”

The announcement of Cook arrived alongside a new batch of tour date additions. Billed alongside the band’s previously announced 2025 dates as the Cook World Tour, the campaign will take the band across North America, Europe, Japan, and Australia.
